  1. 1Place the V60 and paper over the server. Rinse the paper with hot water, then discard the rinse water.
  2. 2Add 18g of Retrograde · VOL. II; make a small well in the bed.
  3. 3Start the timer. Bloom with 45g water, gently swirl once, and wait to 0:45.
  4. 4Pour in controlled circles to 180g by about 1:20, then to 300g by about 1:55.
  5. 5Let the bed drain. Aim for 2:45–3:30, then taste as it cools before changing the grind.
